farm fresh asparagus

When Neal Ely began his FFA Project in 1999, he planted asparagus roots on ½ acre of farmland. Today, Ely Farms raises 4 acres of farm fresh asparagus, with plans to increase production on a yearly basis. We raise three different varieties of asparagus: UC 157, Atlas, and Purple Passion. The asparagus is hand picked by snapping, not cutting the base. This ensures that the entire spear is edible, as the base would not snap if it was woody. The fresh asparagus begins growing in late April and the fresh asparagus harvest lasts six weeks and is usually completed by the first of June.
